Pokemon EV training question?

Been EV training my hitmonlee (pokemon fire red) to get it's attack to max. I gave it 4 proteins (which should give it 40 EV's for attack) and i've killed 20 paras with the macho brace on which should mean that i have 40 more EV's giving me 80 in total. this was all while the pokemon was at the same level and once i leveled up i only got +5 to attack. If every 4 EVs gives you plus 1 then i should have had a lot more added. Is something wrong? (I'm new to EV training so someone correct me if i've made a mistake)
